Rolls (bosch mixer method)

I made these for Pat's Thanksgiving.

place in bosch and mix:
4 c. flour
1 tbsp salt
3/4c potato flakes
2/3 c powdered milk
1/2 c sugar
4 tbsp yeast

Add to mixture and mix:
4 c. hot water

Add and mix
4 eggs
3/4 c soft butter

Add and mix
6 to 7 cup flour (just enough to make soft dough)

Mix for 10 mins. Place in grased container and let rise until doubled in bulk. (or just remove dough hook and let rise to top of bowl). Stir down slightly, remove dough and shape into rolls (cinnamon or dinner). Divide dough in half and roll out on floured surface about 1/2 inch thick. For dinner rolls cute with circle cutter; pat roll with melted butter. Fold in half and place on greased baking pan. Let rise. Bake. Brush top with butter. For cinnamon rolls, roll out dough in rectangler shape; spread with softened butter. Sprinkle with cinnamon and sugar. Add raisins or nuts as desired. Roll up dough and cut with dental floss and place on baking pan. Bake, cool and frost with icing. For rolls bake at 375 for 8-10 minutes. For cinnamon rolls place on greased pan and bake at 375 for 15 minutes. Makes 5-6 dozen

Dinner Rolls

This is the roll recipe that I got from a Kitchen Kneads class once. They are good. (Even without the barley malt powder) You can also use this recipe to make orange or cinnamon rolls.
6 cups bread flour
1 1/2 tsp salt
1 1/2 Tbsp yeast
2 1/2 cups warm water
3 Tbsp powdered milk
1/4 cup sugar
2 Tbsp barley malt powder
2 eggs
1/2 cup olive oil
Mix 3 cups of flour, salt, powdered milk, yeast, barley malt powder, and sugar. Add water, eggs and oil. Beat 6-8 minutes. Add remaining 3 cups flour and beat another 8 minutes. Dough should be somewhat sticky, but if its too sticky add more flour. Raise until double.
Take dough out of bowl and divide into two sections. Let rest for 10 minutes. Roll one section to 1/4 inch thickness in a circle. Cut as you would a pizza into 16 sections with pizza cutter. Roll each section from the large end toward the center and place on greased baking sheet. Repeat with second section. Raise until at least double and bake @ 400 degrees for 7-10 minutes.

Vanishing Breakfast rolls

1 pkg. buttermilk biscuits
2 T. marg.
2T sugar
1/2 tsp. cinnamon
5 lg. marshmallows
Preheat 375. Melt marg. Combine sugar and cinnamon in bowl. Cut marshmallows in half. Roll in marg. then in sugar mixture. Flatten out biscuits and wrap around marshmallow. Make sure it is sealed up tight. Put in muffin cups or on cookie sheet bake 11-13 minutes

Maori Rolls

2 c. warm water
2 T. yeast
1/2 c. sugar
Mix water and yeast and let sit 5 mins. Add sugar; mix
Add:
2 1/2 tsp. salt
3 c flour
Mix well
Add:
1 egg
1/4 c. oil
2-3 c. more flour, 1 c. at a time
Let rise for 1/2 hr. Form into rolls and let rise another 1/2 hr. Bake 375 for 12-20 minutes.
