They are super simple but really good.

6-7 medium russet potatoes, peeled
1 1/2 cups heavy whipping cream
onion salt (about 1 tsp)
fresh cracked pepper

Preheat oven to 375. Butter a 2 qt baking dish.Grate the peeled potatoes with a regular cheese grater and place shreds in a bowl of cold ice water to keep them from turning grey. Once all potatoes are grated- rinse 2-3 times to rinse off all the starch. When done rinsing place on a clean cloth and ring out as much water as you can. You should have 6-7 cups potatoes.Place 2 cups potatoes in prepared baking dish and sprinkle with onion salt. Repeat process until you have used all potatoes. Pour cream all over the top and sprinkle with fresh cracked pepper. Cover dish tightly with foil and bake 40-50 minutes.Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-8106753556746467910.post-47422500662860115302020-04-17T08:20:00.001-07:002020-04-18T07:38:38.084-07:00Pretzel bites

Mix. Add the water. Mix well, adding more flour, if needed, a bit at a time to form a soft, smooth dough that clears the sides and bottom of the bowl. It should be soft but not overly sticky. Knead for 4-5 minutes until the dough is soft and stretchy. Let it rest for 20-30 minutes (or up to 60 minutes) until doubled in size. Preheat oven to 500°F. The high heat ensures the pretzels will brown beautifully on the outside while staying soft and chewy on the inside. Line two half sheet pans with parchment paper and lightly grease with cooking spray. Transfer the dough to a lightly greased or floured work surface, and cut the dough into four thick strips. Cut each strip of dough into about 6-8 pieces. It doesn't have to be exact. Combine the very hot water and baking soda and whisk to combine well. Dip each pretzel bite in the baking soda solution (this helps give the pretzels a nice, golden-brown color). Let the excess liquid drip off before placing the pretzel bites a couple inches apart on the prepared baking sheets. Sprinkle the pretzel bites with coarse, kosher salt. Allow them to rest, uncovered, for about 10 minutes. Bake the pretzels for 7-8 minutes until golden brown. Remove the pretzels from the oven, and immediately brush them with the melted butter. Keep brushing the butter on until you’ve used it all up. Serve warm or at room temperature.

It can be made with ritz crackers, buttery round crackers, saltines etc. (I used saltines). It can be made with or without a filling. I made it with pecans and added almond extract to the whip cream and the other pie with vanilla extract in the whip cream with raspberries folded in.

4 egg whites
1/4 tsp cream of tarter
1 tsp. vanilla
1 cup sugar
16 saltines, crushed
1/2 c chopped pecans
1 cup whipping cream
1/3 cup sugar
1 tsp vanilla or almond extract
2-3 cups raspberries fresh or frozen (or other fruit)

Grease and flour 9 inch pie plate. In a large bowl, beat egg whites and cream of tartar until foamy. Beat in 1 tsp vanilla. Gradually beat in 1 c. sugar until stiff peaks form (tips stand straight). Fold in crackers and pecans. Spread in pie plate and bake 325 for 35-40 minutes until golden. Cool. For filling beat cream, 1/3 cup sugar and extract. If adding berries fold in now. Store in refrigerator. Makes 8 servings. (I also read that you can leave out the nuts and make a lemon filling).Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-8106753556746467910.post-21763550838508929412019-12-02T08:04:00.003-08:002020-04-18T07:39:46.363-07:00Rolls (bosch mixer method)I made these for Pat's Thanksgiving.
4 eggs
3/4 c soft butter

Add and mix
6 to 7 cup flour (just enough to make soft dough)

Mix for 10 mins. Place in grased container and let rise until doubled in bulk. (or just remove dough hook and let rise to top of bowl). Stir down slightly, remove dough and shape into rolls (cinnamon or dinner). Divide dough in half and roll out on floured surface about 1/2 inch thick. For dinner rolls cute with circle cutter; pat roll with melted butter. Fold in half and place on greased baking pan. Let rise. Bake. Brush top with butter. For cinnamon rolls, roll out dough in rectangler shape; spread with softened butter. Sprinkle with cinnamon and sugar. Add raisins or nuts as desired. Roll up dough and cut with dental floss and place on baking pan. Bake, cool and frost with icing. For rolls bake at 375 for 8-10 minutes. 1/2 cup fresh orange juice

This is grandma Jolene's receipe. I remember her making it on Sundays, and sometimes for my birthday, because I really liked it.Kaylenehttp://www.blogger.com/profile/07954397466099364839noreply@blogger.com0tag:blogger.com,1999:blog-8106753556746467910.post-12332671181509468622019-05-12T12:20:00.003-07:002019-10-09T12:27:07.027-07:00Memmie's Brownies from Susan Black4 ounces (Bakers) unsweetened chocolate
2 squares butter (see below)
2 cups sugar
4 eggs
1 1/2 cup flour
1/2 tsp. baking powder
Vanilla
Bake at 350 for 25-30 minutes

I love it because there is no mess only your saucepan. I only use 1&3/4 butter. If you want make them like my grandmother Memmie you will stir the ingredients always in the same direction (either
clockwise or counter clockwise) and put your ingredients immediately away after you use them so you will have a clean kitchen. Frost with a can of milk chocolate frosting while still hot, can put big pieces of walnuts on if you like or jus leave frosted.Kaylenehttp://www.blogger.com/profile/07954397466099364839noreply@blogger.com0tag:blogger.com,1999:blog-8106753556746467910.post-59927914231824036032019-01-08T05:49:00.002-08:002019-01-08T05:50:22.949-08:00Baked creamy chicken taquitos with Cilantro-lime ranch dressingFor the dressing:
Now you can make them at home! They are so good!! The owner of Cutlers taught a class and said the secret is using cake flour! They will work with all purpose but the texture will be different! Use cake flour- you won't regret it!

Cutler’s Famous Glazed Sugar Cookies

1 1/2 cups butter (3 sticks)
2 cups sugar
3 eggs
2 teaspoons vanilla
2 teaspoons baking powder
1/2 teaspoon salt
5 cups cake flour
glaze ingredients (below)
sprinkles for topping cookies
parchment paper (optional)

Cream butter and sugar. Add eggs and vanilla and mix until blended well. Add dry ingredients and mix. To make dough easier to work with, chill before rolling.
Generously flour surface.
Roll dough on floured surface to about 1/4 inch thick. Cut cookies and bake at 350 for 10 minutes.
Cookies are done when top is slightly cracked and no longer looks wet. Edges may be slightly browned.
Top the cookies with glaze.
Makes about 2 1/2 to 3 dozen, depending on the size of your cookie cutter.

Cutler’s Glaze
Single recipe is fine if you are dipping the cookies. If you are pouring out of the trough, double this to insure you will have enough to pour out of pan and cover all cookies

4 cups powdered sugar
1/2 teaspoon almond emulsion* or almond extract
1/2 teaspoon meringue powder**
milk or water to thin (Curt prefers milk) about 1/2 cup
milk will make a thicker glaze, water a thinner glaze

Place powdered sugar in a large bowl. Add almond emulsion or almond extract to the powdered sugar, along with milk or water, a little at a time whisking to combine. Continue whisking until smooth. Add just enough water to make a smooth glaze that stays on a knife when the knife is dipped in the glaze.

Glaze the cookies by dipping the cookie into the glaze in a bowl and removing quickly when coated.

Place cookies on rack or cookie sheet until glaze sets.

Tips:

-*almond emulsion is sold at specialty cooking stores (Orson Gygi’s in Salt Lake City) or stores where cake decorating supplies are sold. You may also use almond extract.

-** Meringue powder is also sold at specialty cooking stores. Cutler’s uses meringue powder to create a shiny effect on their glaze. It is optional when making the glaze. Or you may use the same amount of cream of tartar in place of the meringue powder to create the shiny effect. I have noticed the shiniest effect seems to come when using the combo of water and meringue powder in the glaze.

-If the glaze starts to get too stiff, add a small amount of water and whisk in until desired consistency. I mixed up the glaze, then poured it into a pie plate so we could easily dip the cookies that are covered in white glaze in the photos above.
